Pork Cutting Demonstration at 2019 Allen D. Leman Swine Conference

The University of Minnesota Meat Laboratory brings the classroom to you to conclude the 2019 Allen D. Leman Swine Conference with a pork cutting demonstration and discussion on modern pork marketing. Join Dr. Ryan Cox, Extension meat specialist and Dallas Dornink, Meat Laboratory supervisor, as they demonstrate the most common methods for fabricating fresh pork cuts, as well as discuss current cutting trends and potential markets. Participants are welcome to join for the entire presentation or any portion of interest as a side of pork is cut to its various retail offerings. The program offers an opportunity to ask questions and discuss pork marketing in real time as the products are cut and trimmed.
